7-Up Lemon Cheesecake with Strawberry Glaze Recipe
Ingredients:
2 cups of cracker (Graham); crumbled
1/2 cup of icing sugar
1/2 cup of melted butter
1 pack of gelatin (unflavored)
1.5 cups of 7-Up; divide in two
1 small pack of pudding (lemon)
1 can of filling (pie)
6 Tbsps of sugar
2 whole eggs; well beaten
3/4 cup of water
11 ozs of cream cheese (room temperature)
Instructions:
Combine together the crumbs, sugar, butter and cinnamon. Press into a round pan with removable bottom (nine inch diameter). Place inside the fridge to cool.
Blend together the gelatin with one fourth cup of soda for four minutes. Combine together filling, eggs, water and sugar inside a sauce-pan. Add one and one fourth cup of soda then let mixture boil
Stir constantly. Take off from fire then add the gelatin and soda mixture. Let it cool for three minute.
Incorporate the warmed mixture with the cream cheese. Mix thoroughly and blend with the remainder of 7-Up. Decant cream cheese and soda mixture onto prepared crust then return to the fridge for another eight hours.
Before serving spread tops of cake with strawberry jelly and garnish with real fruit bits on top.
