Amaretto Chocolate Cheesecake Recipe
Ingredients:
For the Crust:
7 ounces of Amaretti
1 ounce of chocolate (unsweetened, 1 square)
2 Tablespoons of sugar (granulated)
5 Tablespoons of butter (sweet)
For the Filling:
6 ounces of chocolate (semisweet)
3 cups of cream cheese
7 ounces of Amaretti
1/2 cup of almond paste
4 pieces of eggs (large)
1/3 cup of liqueur (Amaretto)
1/2 cup of cream (heavy)
1/4 cup of sugar (granulated)
Instructions:
(Crust)
Grease side of 9-inch springform pan. Grind Amaretti inside the processor then combine with refined sugar inside a large bowl. Place the butter and chocolate inside a bain-marie, stir frequently till melted then add onto mixture of sugar-Amaretti. Transfer mixture onto springform pan then press firmly to even out the crust; place inside the refrigerator.
(Filling)
Preheat oven at (350 degrees F). Slightly met chocolate inside the bain-marie; uncover then stir till melted completely. Cool on side.
Coarsely break Amaretti onto the bowl then set on side. Cut paste to small bits then beat gently while slowly adding Amaretto. Beat thoroughly till blended well then set on side.
Beat cream cheese till smooth then add sugar, while continuously beating till smoothened. Add mixture of Amaretto-almond paste; beat thoroughly till blended well. Add (melted) chocolate; beat thoroughly till blended well.
Add eggs individually, while beating continuously then add cream; beat till smooth. Fold in broken pieces of Amaretti. Pour onto the crust and spread evenly.
Bake for 45 mins only. Run a knife on edges to loosen cake. Let it cool then remove pan rim and place inside the refrigerator for 4-6 hrs or for over a night.
