Amaretto Peach Cheesecake Recipe
Ingredients:
1/4 cup of liqueur (almond flavor)
16 ozs of peach (canned; halved
3 whole eggs (large)
3 Tbsps of flour (all purpose); unbleached
3/4 cup of sugar
24 ozs cream cheese (room temperature)
3/4 cup of flour
1 whole egg
1/3 cup of sugar
3 Tbsps of butter
Instructions:
Drain and puree peach halves. Next, cream the sugar with butter. Beating well. Beat in eggs whisking each egg thoroughly.
Next add the flour. Press in to a round pan with removable bottom (nine inch diameter) for ten minutes (450 degrees F).
Next, cream the cream cheese together with sugar. Beating well. Beat in eggs whisking each egg thoroughly.
Pour the purreed peaches then add the almond liqueur. Blend everything thoroughly. Decant cream cheese mixture onto the prepared crust and return to the oven to bake for ten more minutes.
Lower down temperature (250 degrees F) and keep baking for sixty more minutes. It is necessary to cool cheese cake prior to removing from the pan. Place in the fridge to cool.
Spread slices of peach and slivers of almonds on top.
