Arkansas Cheesecake Recipe
Ingredients:
1 piece of egg (separated)
1/2 cup of milk (milk)
1 package of gelatin
1/8 teaspoon of salt
1 Tablespoon of artificial sweetener (Equal)
1-1/2 cup of cheese (Cottage)
1 Tablespoon of juice (lemon)
1 teaspoon of vanilla extract
6 Tablespoons of Cool Whip (lite)
For the Crumb Topping:
2 pieces of crackers (Graham); crushed
1/8 teaspoon of nutmeg (ground)
1/8 teaspoon of cinnamon (ground)
Instructions:
Place the cheese inside the blender; blend till smoothened thoroughly and set on the side.
Place the yolk inside a bain-marie; beat thoroughly then add the milk, salt, and gelatin. Cook till the gelatin has dissolved or the mixture has thickened. Take out from the heat then add artificial sweetener. Let it cool.
Once cooled, add the cheese, vanilla, and juice. Chill while stirring frequently till thick. Beat the white of egg till stiff then fold onto the chilled mixture with the cool whip. Pour onto the (Graham) crust and spread the topping on top.
To make the topping, combine crushed crackers, nutmeg, and cinnamon. Mix thoroughly.
