Black Forest Mini Cheesecakes Recipe
Ingredients:
24 pieces of wafer cookies (vanilla)
16 ounces of softened cream cheese
1-1/4 cups of sugar (refined)
1/3 cup of cocoa (Hershey’s)
2 Tablespoons of flour (all purpose)
3 pieces of eggs (large)
8 ounces of sour cream (dairy)
1/2 teaspoon of almond flavoring (or extract)
Pie filling (cherry, canned); chilled
For the Topping:
8 ounces of sour cream (dairy)
2 Tablespoons of sugar (refined)
1 teaspoon of vanilla
Instructions:
Heat the oven at (325 degrees F). Line the muffin tins with the foil baking cups. Put a wafer (flat side down) inside each tin.
Beat the cream cheese till smooth then add cocoa, flour, and sugar; blend thoroughly. Add the eggs and beat thoroughly. Add extract and sour cream; stir thoroughly.
Fill the muffin tins with the batter and bake for 20-25 mins. Take out from the oven and allow to cool for 5-10 mins. Spread topping above each tin.
Cool, on the rack, completely then place inside the refrigerator till chilled. Spread cherry filling above the cake then serve.
To make the topping, combine sugar, vanilla, and sour cream in a saucepan above low heat. Stir constantly till sugar has dissolves.
