How To Prepare A Blackberry Cheesecake

Blackberries are very common wild berries that are found all over South and North America, Asia and Europe and they’re very popularly used for wines, jellies, cobblers and pies. Aside from those common uses, the blackberry is great to use inside cheesecakes too. You can use either freshly picked blackberries or some blackberry jelly and this yummy recipe will surely please your guests.

You will need:

1& 1/4 c cracker crumbs (Graham)
1/4 c butter
1 & 1/4 c sugar
1 tbsp cinnamon
3 pkgs (8 ozs each) cream cheese
4 pcs eggs
1 tsp vanilla
1.5 tbsps cornstarch
1 jar jelly (blackberry)
1/2 pkg blackberries (frozen); thaw them out – fresh is
needed but if there are none then frozen will do.

Instructions:

Preheat your oven up to around 300 deg. F. Process your crackers inside your food processor or you can also put them inside a Ziploc bag then just crush them with any heavy object or a rolling pin. Mix together crumbs, butter, cinnamon & sugar inside a glass bowl then stir until everything is well blended.

Press this mixture into the bottom of your 9-inch pan (spring form) and make sure that you get your hands coated with a bit of oil so that the cracker mixture won’t stick or use some gloves if you want.

Get a saucepan then pour in your jelly and allow it to melt. Then add your thawed out or fresh blackberry fruits and stir well to incorporate all the ingredients in there. After they have mixed well, take them off the heat and allow to cool.

Inside a glass bowl, mix together eggs and cream cheese but be sure that you add your eggs 1 at a time and make sure that they’re fully blended together before you add your vanilla, 1 cup of sugar and cornstarch to your mix. After mixing well, add the blackberry mix and stir gently to mix them all up.

Pour this mixture onto your crust then bake inside your oven for about 45 mins to 1 hr. or just ’til sides of your cheesecake are starting to separate. Take them out of your oven then allow to get cool on top of a rack. After it has cooled down completely, put inside your refrigerator to chill ’til it has firmed up.

After that there is nothing left to do but enjoy the fruits of your labor and have that deliciously sinful cheesecake treat that you’ve just made yourself.

Cheesecake is not really an intimidating dessert although it may look like it but in reality it’s really easy and simple to make and is one wonderful dessert treat that would be a welcome addition to any table.
