Chocolate Amaretto Cheesecake Recipe

Ingredients:

1 cup of almonds; blanched
1 cup of sugar
1 Tbsp of sugar
24 ozs cream cheese (room temperature)
2 cups of sour cream
3 Tbsps of butter; melted
4 whole eggs
1/3 cup of sugar
2 tsps of vanilla extract
1/2 cup of amaretto
1 cup of almonds; toasted lightly then chopped
1/3 cup of cream
1.5 of wafer (chocolate); crumbled

Instructions:

Mix together melted butter, sugar, almonds and wafer crumbs. Press in to a round pan with removable bottom (nine inch diameter). Bake this for ten minutes (350 degrees F).

Next, cream the sugar with cheese. Beat well. Beat the eggs in whisking each egg thoroughly.

Pour a small amount of vanilla. Decant cream cheese mixture onto the prepared crust and return to the oven and bake it for an hour and a half at 375 degrees F. It is necessary to cool cheesecake prior to removing from the pan.

Next add the sour cream then the sugar. Pour a small amount of vanilla plus liqueur. Spread on atop cheesecake and bake it for five minutes. Let it cool to room temperature.

Cover with cling wrap and place inside the fridge for twenty four hours. Garnish cheesecake with slivers of toasty almonds before serving.
