Usually sponge pastries or cakes, biscuits and cookies are used to make the flavorful crust of a cheesecake. When you make your base, see to it that you just prepare it around 0.5cm – 1 cm thick. There is no problem in choosing the taste and flavor of cookies or biscuits; you may choose any flavor you want.

You may use butter or chocolate flavors to add a little twist to the cheesy taste of the pastry. Its base mixture is normally blended with hot softened butter so that the pastry will hold well on its crust once you press onto the bottom of the baking pan or mold.

There’s actually a few ways to toughen the pastry crust. You may either chill or bake it before putting the creamy filling. When you make cheesecake, always ensure that the large eggs and the rest of the required ingredients or materials are fresh. Measure them according to the indicated amounts and follow the steps properly to achieve good tasting cheesecake. Making pastry desserts like cheesecake requires accuracy.

If in case, you fear that your cake will crack after you use a “water bath” procedure. This process will avoid cracking of your cake. You do this by putting little amount of water inside the bigger pan and place the prepared cheesecake (ready for cooking) and bake it accordingly. To ensure that the water will not go into the baking pan, you can put foil underneath the baking pan or mold.

Slowly bake the pastry over low heat to avoid cracking. When it’s done, let the baked cheesecake stay in your oven but keep the door half-open for 5 hours. Then remove the baked cheesecake from your oven and let it cool over room or normal temperature.

You need to put the baked cheesecake inside the fridge overnight to chill. Do not unmold the freshly baked cheesecake without chilling the pastry first. When you serve the chilled cheesecake, first you need to dip the knife into hot water to warm it. Warm knife is necessary to cut the delicious cheesecake neatly and properly.
