Cherry Cheesecake Recipe
Ingredients:
2/3 cup of cottage cheese
Sugar substitute (equal to 6 Tbsps of sugar)
1 Tbsp of lemon zest
1/2 tsp of vanilla essence
2 whole eggs; yolks separated
1/4 cup of milk (skimmed & evaporated)
1/3 cup of milk (non-fat, instant & dry)
1 cup of cherries (pitted)
1/4 cup of beverage (cherry flavored)
Sugar substitute
1/4 tsp of cherry essence
Instructions:
Preheat oven (350 degrees F). Mix together cheese, sugar substitute, lemon zest, vanilla essence, yolks, milk then vanilla essence in a processor. Blitz for one minute. Decant into a mixing bowl.
Whisk the whites ’till peaks that are stiff form. Fold the whites in. Decant mixture inside a pan with removable bottom then bake for forty minutes.
For the topping cook the cherry in cherry beverage ’till they become soft and the liquid has evaporated. Season with sugar, add the extract and spread on top of cake then bake for additional five minutes.
