Chocolate Mint Meringue Cheesecake Recipe

Ingredients:

7 ozs marshmallow cream (1 jar)
3 whole egg (whites)
1 tsp of vanilla
1 cup of choco chips (mint); melted
3 whole eggs (large)
2/3 cup of sugar
1 pack of cream cheese (24 ozs, at room temperature)
2 Tbsps of sugar
3 Tbsps of butter; softened
1 cup of wafer (chocolate); crumbled

Instructions:

Mix together the sugar, nuts and margarine. Press at the bottom using a nine inch diameter pan with removable bottom. Bake crust for ten minutes (325 degrees F).

Next, cream the sugar and cream cheese. Beating well. Beat in eggs whisking each egg thoroughly.

Pour a small amount of vanilla and stir in chocolate mint. Slowly decant onto the cheese mixture. Mix thoroughly until everything is incorporated.

Decant cheese-coffee mixture onto the prepared crust and bake for fifty minutes. Remove pan bottom and cool in the fridge for two hours. Before serving, whisk egg white.

When soft peaks form, slowly mix in marshmallow cream to form stiff peaks. Spread slowly over cheesecake. Bake for another four minutes (450 degrees F) until nicely browned on top.
