Amaretto Cheesecake with Apricot Glaze Recipe
Ingredients:
For the Crust:
2 Tablespoons of sugar (refined)
1/2 cup of almonds (unblanched); chopped then toasted
1 cup of cracker crumbs (Graham)
1/4 cup of melted butter
For the Filling:
4 packages of cream cheese (250 g); softened
3 Tablespoons of flour
4 pieces of eggs (large)
1 cup of sour cream (dairy)
1/4 cup of liqueur (Amaretto di Saronno)
1 cup of sugar (refined)
For the Glaze:
1 Tablespoon of liqueur (Amaretto di Saronno)
1/2 cup of apricot preserves (or jam)
Instructions:
(Crust)
Combine crumbs, sugar, almonds, and butter; press firmly onto the base of 9-inch (springform) pan.
(Filling)
Combine sugar, flour, and cream cheese; beat thoroughly. Add the eggs individually, while beating continuously. Add liqueur and sour cream; blend thoroughly; pour above the crust.
Place inside the oven and bake (450 degrees F) for 10 mins. Reduce the temperature (250 degrees F) and continue to bake for another hour. Loosen the cake from the rim and allow to cool completely before placing inside the refrigerator to chill.
(Glaze)
Combine liqueur and jam inside the saucepan and heat till smooth and warm. Strain then pour above the cheesecake. Remove the rim and serve.
