Cookies and Cream Cheesecake Recipe


Cookies and Cream Cheesecake Recipe

Ingredients:

2 cups of cookies (cream-filled, chocolate); chopped coarsely
6 Tablespoons of softened margarine
1 envelope of gelatin (unflavored)
1/4 cup of water (cold)
8 ounces of softened cream cheese
1/2 cup of sugar (refined)
3/4 cup of milk
1 cup of whipped cream (whipped)
1-1/4 cup of cookies (creme-filled, chocolate); chopped coarsely

Instructions:

Combine margarine and crumbs; press firmly onto the base of a 9 inch (springform) pan.

Mix gelatin with water then stir above gentle heat till dissolved. Using a mixer, combine sugar and cream cheese; beat till blended well. Slowly add the milk and mixture of gelatin; mix thoroughly till blended well.

Place the mixture inside the refrigerator to make it thick. Once thickened, fold the whipping cream into the chilled mixture. Save 1-1/2 cup of the mixture then pour the rest above the crust.

Spread evenly and top chocolate cookies then cover with saved 1-1/2 cup of mixture. Place inside the refrigerator till set.
