Almond Amaretto Cheesecake Recipe
Ingredients:
Strawberries
1 Tbsp of flour (all purpose)
3 Tbsps of liqueur (amaretto)
1/4 cup of cream
5 whole eggs (large)
2 whole yolks
2 tsps of lemon rind; shredded
1 2/3 cups of sugar
5 packs of cream cheese (8 ozs each, room temperature)
1/4 tsp of almond essence
1 whole yolk
1/2 cup of butter; unsalted
Dash of salt
1 cup of flour (all purpose); unsifted
1/4 cup of almonds; toasted
1/4 cup of sugar
Instructions:
Prepare the crust. Place sugar, almonds, salt and flour in a processor and blitz to fine crumbs. Next, add the butter and blitz to get a coarse texture. Then add the yolk then essence of almond and blitz until you form a dough.
Press in to a round pan with removable bottom (nine inch diameter). Chill for an hour.
Preset oven (400 degrees F). Bake the crust for eight minutes until set. Let it stand on the sides.
For the filling cream the cheese and sugar. Beating well. Beat the eggs in whisking each egg thoroughly. Mix in the lemon rind. Beat everything thoroughly. Whisk in cream then almond liqueur. Add the flour ’till just incorporated.
Crank the oven up to about 500 degrees F. Decant cream cheese mixture onto the prepared crust and return to the oven to bake twelve minutes. Then lower heat to about 200 degrees F and bake for an hour more.
Leave cheesecake inside oven for half an hour with the door ajar. It is necessary to cool cheese cake prior to removing from the pan. Spread strawberry slices on top and chill prior to cutting cheesecake.
