Cheddar Cheesecake with Strawberries Recipe
Ingredients:
1-1/4 cup of wafer crumbs (vanilla)
2 Tablespoons of melted butter (or margarine)
16 ounces of softened cream cheese
1/2 cup of sharp cheese (Cheddar); shredded
3/4 cup of sugar (refined)
3 pieces of eggs (large)
1/2 teaspoon of orange zest; grated
1/4 teaspoon of lemon zest; grated
2 Tablespoons of flour
1 cup of cream (heavy)
1 pint of strawberries (fresh)
Corn syrup (light)
Instructions:
Combine butter and crumbs; press firmly onto the base of a 9-inch (springform) pan. Place inside the oven and bake (350 degrees F) for five mins.
Combine cream cheese, sugar, and Cheddar cheese; beat till fluffy. Add the eggs individually, while beating continuously. Add zests, (1/2 cup) cream and flour; blend thoroughly. Pour above the crust.
Bake (350 degrees F) for forty mins. Let it cool then arrange strawberries above and brush top with syrup. Place inside the refrigerator till chilled.
