Cheddar Chili Cheesecake Recipe
Ingredients:
1 clove of garlic; cut in two
2 Tbsps of milk
3 Tbsps of peppers (Jalapeno); de-seed & minced
4 whole eggs
3/4 cup of scallions; diced
1 cup of cottage cheese
3/4 lb of cheese (cheddar); shredded
1.5 lb of cream cheese; softened
6 ozs of ham; sliced thinly
1/4 cup of cheese (cheddar); finely shredded
1/4 cup of bread crumbs; toasted
1.5 Tbsps of butter
Instructions:
Preset oven (325 degrees F). Combine the one fourth cup of cheddar and bread crumbs. Place inside a nine inch pie pan with removable bottom. Place in the fridge.
Place ham, remaining cheddar, scallions, garlic, peppers and cream cheese inside a food processor. Blitz until velvety in texture.
Decant three fourths of cream cheese mixture onto baking pan. Place some more sliced ham then layer with the remainder one fourth mixture. Bake for an hour and twenty five minutes.
Turn off but leave the cheesecake to cool inside for an hour. Leave ajar oven door. It is necessary to cool cheese cake prior to removing from the pan.
Chill prior to serving.
