Chocolate Cheesecake Recipe
Ingredients:
8.5 ounces of wafers (chocolate); crushed
1 Tablespoon of softened butter
4 packages of softened cream cheese (8 oz each)
1/2 cup of sugar (refined)
2 Tablespoons of corn starch
4 pieces of eggs (large)
1 Tablespoon of vanilla extract
3 squares of chocolate (semisweet, 1 oz each); melted then cooled
8 ounces of sour cream
Instructions:
Heat the oven (300 degrees F). Combine crushed wafers and butter; press firmly onto the base of a greased 9-inch springform pan then bake for ten mins.
Beat the cream cheese till fluffy. Add cornstarch and sugar; beat thoroughly. Add the eggs individually, while beating continuously. Add vanilla, sour cream, and chocolate; fold gently till well combined.
Pour onto the hot crust and bake for an hr. Turn the oven off and let the cake sit inside for an hour or more. Take pan out and let it cool completely. Cover (without touching surface) and place inside the refrigerator for over a night.
Run a knife on the edges of the cake, making it loosen from pan then remove the rim. Place the cake onto a plate. Decorate whipped whipping cream on top, if preferred.
