Chocolate Cherry Cheesecake Recipe
Ingredients:
1/2 cup of whipping cream (heavy)
1 pound of berry filling (cherry)
1 tsp of vanilla essence
3/4 cup of liqueur (cherry)
4 whole eggs (large)
1/2 cup of sugar
16 ozs cream cheese (room temperature)
1 1/2 cup of cream (heavy)
12 ozs choco chips (semi-sweet)
1/2 cup of butter; softened
8.5 ozs of wafers (chocolate); crumbled
Instructions:
Mix together melted butter and chocolate crumbs. Press in bottom then sides of a round pan with removable bottom (nine inch diameter). Place in the fridge to cool.
Preset oven (325 degrees F). Melt chocolate and cream using a double boiler. When mixture becomes smooth, remove from heat. Set it aside.
Next, cream the sugar and cream cheese. Beat well. Beat in eggs whisking each egg thoroughly.
Incorporate the chocolate syrup and liqueur. Add vanilla. Blend everything thoroughly.
Decant cream cheese mixture onto the wafer crust and return to the oven to bake for sixty minutes. It is necessary to cool cheese cake prior to removing from pan.
Pour cherry filling atop cheesecake. Dollop whipping cream as needed.
