Chocolate Raspberry Cheesecake Recipe
Ingredients:
1-1/2 cup of cookie crumbs (cream filled); crushed finely
2 Tablespoons of melted margarine
32 ounces of softened cream cheese
1-1/4 cup of sugar (refined)
3 pieces of eggs (large)
1 cup of sour cream (dairy)
1 teaspoon of vanilla extract
6 ounces of choco chips (semisweet); melted then cooled slightly
1/3 cup of raspberry jam (or preserves); strained
6 ounces of choco chips (semisweet)
1/4 cup of whipped cream
Instructions:
Combine margarine and crumbs; press on the base of a 9-inch (springform) pan. Using a mixer, beat sugar and (24 ounces) cream cheese till blended well. Add the eggs individually, while beating continuously. Add vanilla and sour cream; blend thoroughly and pour above the crust.
Beat (melted then cooled) chocolate with (8 ounces) cream cheese, using a mixer, till blended well. Add the preserves and mix thoroughly. Scoop spoonfuls of the chocolate batter above the plain batter, don’t swirl.
Place inside the oven and bake (325 degrees F) for one hr and twenty-five mins. Run a knife around the sides to loosen the cake. Let the cake cool then remove the rim.
Melt the chocolate and whipped cream above gentle heat; stir constantly till mixture has smoothened. Spread above the cheesecake and place inside the refrigerator. Serve chilled.
