Chocolate Turtle Cheesecake Recipe
Ingredients:
1/2 cup of chocolate chips (semi-sweet); melted
2 whole eggs (large)
1 tsp of vanilla essence
1/2 cup of sugar
16 ozs cream cheese (room temperature)
1 cup of pecans; toasted & chopped
1 can of milk (evaporated, 5 ozs)
1 bag of caramels (14 ozs)
6 Tbsps of butter; melted
2 cups of wafer (vanilla); crumbled
Instructions:
Mix together melted butter and wafer crumbs. Press in to a round pan with removable bottom (nine inch diameter). Bake this for ten minutes (350 degrees F).
Meanwhile, melt the caramels in milk using moderate heat in a saucepan. When a smooth consistency has been reached, decant onto crust and add the pecans on top.
Next, cream the cream cheese and sugar. Beating well. Beat in eggs whisking each egg thoroughly. Pour a small amount of vanilla. Fold the chocolate in and mix well.
Decant over the caramel pecan mixture. Return cake to the oven to bake for forty more minutes. It is necessary to cool cheese cake prior to removing from the pan.
Place in the fridge for 2 hours then serve along side more nuts, cherries and whipping cream.
