Cranberry Cheesecake Topping Recipe
Ingredients:
12 ozs cranberries (fresh or frozen)
3/4 cup of sugar
1/2 cup of juice (cranberry); concentrated
1/4 cup of water
4 whole eggs
1 cup of sugar
1 pinch of salt
1/2 cup of whipped cream
1 pack of vanilla granules
1.5 lbs of cream cheese; softened
6 Tbsps of butter that has melted
1/4 cup of sugar
1.5 cup of wafers (vanilla); crumbled
Instructions:
Cover the sides and bottom of a pan that has a removable bottom. Mix together the sugar, crumbs with butter. Flatten crumbs in the pan then bake ten minutes.
For the filling cream the cheese, sugar then beat in the eggs one at a time until everything is incorporated. Decant cream cheese mixture inside baked pie crust.
Pop in the oven for fifty minutes until set. Then place in the fridge to chill.
For the topping mix the cranberry juice, cran berries and sugar using a saucepan. Bring mixture to boil. Simmer for three minutes.
Run the syrup through your strainer and then spoon on top of cheesecake. Serve chilled.
