Diabetic Cheesecake Recipe
Ingredients:
6 pcs of crackers (Graham); crumbled
1.5 Tbsps of butter; melted
4 pcs of strawberries
1/2 tsp of lemon essence
2 cups of cottage cheese (4%PRCTG% fat content, 16 ozs)
1/4 cup of sugar substitute
1/2 cup of fresh lime juice
1/2 tsp of lemon zest; shredded
1/3 cup of water (boiling)
1/2 cup of water (cold)
1 Tbsp of gelatin (granulated)
Instructions:
Grease a baking dish using a vegetable coating. Mix together melted butter and Graham crumbs. Press in to a round pan that has a removable bottom (nine inch diameter).
Soak the gelatin granules in water (cold). Mix in with the boiling or hot water, lemon zest and juice. Add the sweetener or sugar substitute. Mix ’till thoroughly dissolved.
Place in the fridge until gelatin resembles egg whites that have not been beaten. Next, place two tablespoons of water, lemon essence and cheese in a processor blitz for fifteen seconds.
Include half of the gelatin in and process again until smooth and thoroughly blended. Decant cream cheese mixture onto the prepared crust. Its necessary to cool cheese cake prior to removing from the pan.
Clean and halve strawberries lengthways. Arrange it atop cheesecake and chill for a few more hours before serving.
