Gala Apricot Cheesecake Recipe
Ingredients:
2-1/4 cups of quick oats (uncooked)
1/3 cup of sugar (brown)
3 Tablespoons of flour (all purpose, unbleached)
1/3 cup of melted margarine
1 envelope of gelatin (unflavored)
1/3 cup of water (cold)
16 ounces of softened cream cheese
1/2 cup of sugar (granulated)
2 Tablespoons of Brandy
1/2 cup of apricots (dried); chopped finely
1 cup of whipped cream (whipped)
10 ounces of apricot jam (or preserves, jarred)
1 Tablespoon of Brandy
Instructions:
Combine (brown) sugar, oats, margarine, and flour; press firmly onto the base of a 9-inch (springform) pan. Place inside the oven and bake, (350 degrees F) for 15 mins. Let it cool.
Mix gelatin with water on a saucepan above gentle heat; stir constantly till dissolved. Mix (granulated) sugar and cream cheese; beat moderately till blended well. Slowly add brandy and gelatin, while beating continuously till blended well.
Place inside the refrigerator to chill till slightly thick. Fold apricots into the mixture and add the whipping cream; mix thoroughly. Pour onto the crust then refrigerate till firm.
Combine brandy and preserves in a saucepan above gentle heat. Let it cool and spoon above the cheesecake.
