Holiday Eggnog Cheesecake Recipe
Ingredients:
1 cup of cracker crumbs (Graham)
1/4 teaspoon of nutmeg (ground)
1 envelope of gelatin (unflavored)
8 ounces of softened cream cheese
1/4 cup of sugar (refined)
1/4 cup of melted margarine
1/4 cup of water (cold)
1/4 cup of sugar (white)
1 cup of whipping cream (whipped)
1 cup of eggnog
Instructions:
Combine sugar, crumbs, margarine, and nutmeg; press firmly onto the base of a 9-inch (springform) pan.
Mix gelatin with water then stir above gentle heat till dissolved thoroughly. Combine sugar and cream cheese; beat till blended well.
Slowly add eggnog and gelatin; mix till blended well.
Chill till slightly thick. Fold whipping cream into the mixture. Pour above the crust and chill till firm or set.
Variation:
Replace eggnog with milk
Increase the sugar into 1/3 cup
Add 1 teaspoon of vanilla
Add 3/4 teaspoon of rum flavoring or extract
