Lemon Cheesecake Recipe


No Bake Lemon Cheesecake Recipe

Ingredients:

1 package of Jell-o (lemon, 3 oz)
1 cup of water (boiling)
2 packages of cream cheese (8 oz)
1/2 cup of sugar (refined)
1 teaspoon of vanilla extract
1 packet of instant topping mix (Dream Whip)

For the Crust:
1-1/2 cup of cracker crumbs (Graham)
1/3 cup of sugar (refined)
6 Tablespoons of butter; melted

Instructions:

Combine sugar, butter, and crumbs, (save 1/4 cup); press firmly onto the sides (up to 1-1/2 inch) and base of a 7×11x2 inch pan.

Dissolve the Jell-O with water inside a bowl; chill till slightly thickened. Beat sugar, vanilla, and cream cheese till fluffy. Add the gelatin; beat thoroughly.

Prepare the topping as stated in the package instructions; fold onto the mixture of cheese. Pour onto the pan and sprinkle the saved mixture of crumbs.

Place inside the refrigerator for 3-4 hours. Serve.
