Tempting Trifle Cheesecake Recipe
Ingredients:
1/2 cup of whipping cream
1 tsp of vanilla essence
1/2 cup of artificially soured cream
4 whole eggs (large)
24 ozs cream cheese (room temperature)
1 tsp of almonds; slivered & toasted
10 ozs raspberry preserve
2 Tbsps of cherry (sweet)
1/2 cup of whipped cream
3/4 cup of sugar
1.5 cup of macaroons (soft coconut cookies)
Instructions:
Press cookie macaroons to a round pan with removable bottom (nine inch diameter). Bake this for fifteen minutes (350 degrees F).
Next, cream the sugar and cream cheese. Beating well. Beat in eggs whisking each egg thoroughly. Next add the soured cream then the whipping cream.
Pour a small amount of vanilla and the sherry. Decant cream cheese mixture onto the prepared crust and return to the oven to bake for sixty minutes. It is necessary to cool cheese cake prior to removing from the pan.
Place in the fridge to cool. Before serving, heat the raspberry preserve over moderate heat ’till it melts. When finished, pass through a sieve to strain seeds.
Scoop on cheesecake, spread and dollop a generous amount of whipping cream. Sprinkle almond-slivers on top.
