White Chocolate Cheesecake Recipe


Cranberry & White Chocolate Cheesecake Recipe

1. CAKE:

Ingredients:

For the Cake:
2 packages of cream cheese (8 oz each)
4 ounces of chocolate (white); chopped
3/4 cup of sugar (refined)
3 pieces of eggs (large)
2 teaspoons of vanilla extract
3 cups of sour cream
Salt

For the Crust:
2 Tablespoons of melted butter
2 ounces of chocolate (white); chopped
1 cup of cracker crumbs (Graham)

For the Glaze:
1/3 cup of sugar (refined)
2 cups of cranberries
1 teaspoon of cornstarch
1/4 cup of water

For the Garnish:
Grated chocolate (white)

Instructions:

(Crust)
Combine butter and crumbs till moistened. Add chocolate; stir thoroughly. Press firmly on the base of buttered 9-inch (springform) pan. Wrap the pan tightly with foil. Bake (325 degrees F) for eight mins. Allow to cool.

(Cake)
Melt the chocolate inside a bain-marie then let it cool. Beat the cream cheese inside a bowl till softened. Slowly add the sugar then beat till fluffy. Add the eggs individually, while beating continuously. Add vanilla, salt, and chocolate; stir thoroughly and add sour cream; blend thoroughly.

Pour above the crust. Place the pan inside a bigger pan then pour (hot) water inside the bigger pan. Put inside the oven and bake (325 degrees F) for 75 mins. Turn off the oven and cool for an hour.

Take out from the bigger pan then take out the foil from the pan. Let cake cool then cover. Place inside the refrigerator overnight.

(Glaze)
Cook the cranberries with water inside a saucepan, covered partially, till boiling. Add sugar; stir and let it boil again. Cook till sugar has dissolved. Drain, save the berries and juice separately.

Take the chilled cake out and place above the plate. Heat the juice then add the cornstarch; blend thoroughly till mixture turns thick. Let it cool for a while. Spoon the berries on top of cake (arrange on the edge) and spoon the glaze above.

Place inside the refrigerator for an hour. Garnish grated chocolates and serve.

2. CHEESECAKE:

Ingredients:

For the Crust:
1-1/2 cups of cracker crumbs (Graham)
2 Tablespoons of sugar (refined)
2/3 cube of melted margarine

For the Filling:
2 packages of cream cheese (8 oz); softened
1/2 cup of sugar (refined)
1/2 teaspoon of vanilla extract
2 pieces of eggs (large)

For the Topping:
1 cup of sour cream (dairy)
1/2 teaspoon of vanilla extract
2 Tablespoons of sugar (refined)

Instructions:

(Crust)
Combine crumbs, sugar, and melted margarine; press firmly on a 9-inch pie dish. Bake (350 degrees F) for five mins. Set on the side.

(Filling)
Beat cream cheese, sugar, vanilla, and eggs till blended well. Pour onto the crust. Place inside the oven and bake (350 degrees F) for 20 to 30 mins.

(Topping)
Combine sour cream. vanilla, and sugar; mix thoroughly then pour above the cheesecake. Bake (350 degrees F) for five mins.

Place inside the refrigerator for three hours till chilled. Top cheesecake with any filling (of your choice). Serve chilled.
